Baked Artichoke Hearts and My Annual Pie Giving Day

Looking for a dish that brings warmth and flavor to your Thanksgiving table? These Baked Artichoke Hearts with Lemon and Breadcrumbs are a crowd-pleaser, packed with fresh lemon zest, garlic, and two kinds of cheese for a rich, savory bite. Let’s dive into the recipe!

Ingredients:

  • 16 ounces canned artichoke hearts (if using frozen, defrost in refrigerator first)

  • 1 lemon, zested and cut in half

  • 1/2 cup plain breadcrumbs

  • 2 tablespoons minced fresh parsley

  • 3 cloves garlic, minced

  • 4 tablespoons grated pecorino-Romano or Parmigiano Reggiano cheese

  • 1/4 teaspoon kosher salt

  • 1/4 teaspoon black pepper

  • 3 tablespoons olive oil

  • 1 cup mozarella, shredded

Instructions:

1. Preheat your oven to 350°F. Grease an 8 x 8-inch casserole dish with half of the olive oil.

2. In a small bowl, mix together the lemon zest, breadcrumbs, parsley, garlic, two grated cheeses, salt, pepper, and the juice of the lemon. Taste and adjust seasoning as needed.

3. Arrange the artichoke hearts in a single layer in the casserole dish and drizzle with the remaining lemon juice. Add about 1/3 cup water to create a thin layer at the base of the dish (this will help steam the artichokes and keep the breadcrumbs moist).

4. Sprinkle the breadcrumb mixture evenly over the artichokes and drizzle with additional olive oil.

5. Sprinkle the mozarella evenly over the breadcrumbs.

6. Cover the dish tightly with a lid or foil and bake for 30 minutes.

7. Increase the oven temperature to 400°F, remove the cover, and bake for an additional 10 minutes, until the breadcrumbs are golden brown. Sprinkle with a little extra grated cheese before serving warm.
