Delicious Minestrone Soup and My 12-Month Homeowner Checklist
Let’s make some delicious Minestrone soup while I share one of my best resources with you: my 12-month homeowner checklist!
Ingredients:
4 tablespoons extra-virgin olive oil, divided
1 medium yellow onion, chopped
2 medium carrots, peeled and chopped
2 medium ribs celery, chopped
2 cups baby spinach, chopped kale or chopped collard greens
1 cups chopped potatoes, yellow squash, zucchini,
1 cup butternut squash
1 large can (28 ounces) diced tomatoes, with their liquid (or 2 small 15-ounce cans)
2 cups water
1 teaspoon fine sea salt
Freshly ground black pepper
1 cup small sized pasta
1 can (15 ounces) Great Northern beans or cannellini beans, rinsed and drained, or 1 ½ cups cooked beans
Parmesan cheese rind, plus more for garnishing
Here’s How to Do It:
In a large saucepan, cook onion, carrots, and celery in olive oil for about 10min. Stir in chard, potatoes, squash, tomatoes, and beans. Add just enough water to cover the veggies then add a cheese rind if using. Bring to a simmer, then reduce heat to low. Add salt and pepper and cook uncovered for about 1 ½ hrs. then Add small sized pasta and cook until tender. Ladle into a bowl and enjoy! Watch the video here!
