Veggie-Packed Egg Muffins and Why Bigger Isn’t Always Better

This month we’re making Veggie Packed Egg Muffins and I’m sharing why Bigger Isn’t Always Better! Let’s get started!

Ingredients:

  • 1 dozen eggs

  • Chopped, cooked veggies (I used zucchini, mushrooms, peppers, and spinach, but you can use whatever you have on hand)

  • Salt and Pepper

  • 1/2 c. Feta Cheese

Here’s How to Do It:

Preheat oven to 350 degrees

Lightly Coat 12 cup muffin tin with nonstick spray

Divide chopped cooked veggies evenly into a muffin tin

Whisk up eggs, add salt & pepper and pour over veggies.

Top with feta cheese.

Bake in the over for 25 min or until set. Watch the video for how to make this cute and tasty snack!

Why Bigger Isn’t Always Better

Embrace the freedom, convenience, and financial advantages of downsizing into a cozy, functional space built for the way you want to live. The happiest upgrades often come with shrinking square footage.
