Chocolate Mousse & Why You Should Marry the House and Date the Rate
Love is in the air this Valentine's Day, and while I'm sharing Chrissy Teigen's irresistible chocolate mousse recipe (trust me, it's as easy as falling in love), I also want to talk about another kind of relationship – the one with your future home. Just like finding the perfect chocolate-to-cream ratio in a mousse, house hunting is all about balance, which brings me to a savvy piece of real estate wisdom: "marry the house, date the rate." Let's dive in and I’ll explain!
Ingredients:
For the mousse:
1 cup good semisweet or dark chocolate chips or roughly chopped solid chocolate.
1/3 cup whole milk
¾ cup heavy cream
½ teaspoon baking soda
¼ teaspoon kosher salt
Homemade whipped cream topping:
½ cup heavy cream
1 tablespoon of sugar
Here’s How to Do It:
In a large microwave-safe bowl, combine the chocolate chips and milk. Microwave on high for 1 min 15 seconds. Remove and stir the mixture until melted and smooth.
Once the chocolate is cooled, whip the cream until stiff peaks form 2-3 min. Gently fold the whipped cream into the cooled chocolate until uniform, making sure not to stir too hard or the mousse will deflate. Divide evenly among four smallish glasses, like juice glasses or martini glasses. Chill for at least 2 hrs or up to 24 hrs.
Top each with fresh homemade whipped cream.

Why You Should Marry the House and Date the Rate
The strategy of "marry the house, date the rate" is a simple way to think about buying a home even when mortgage rates are high. Here's an easy explanation:
Marry the house: Focus on finding the right home that fits your needs, lifestyle, and budget. This is a long-term commitment—you're choosing a place to live and invest in for the future.
Date the rate: Don't stress too much about the current mortgage rate because it's temporary. You can refinance to a lower rate later when rates improve, making your monthly payments more affordable over time. In short, prioritize the home you love and see the interest rate as something you can "break up with" when the time is right!
It Just Makes Cents
Throughout history, we've seen mortgage rates rise and fall, but the right home in the right location has consistently proven to be a solid long-term investment. Remember, you're not just buying four walls and a roof—you're investing in your future and creating a space where life's most precious memories will unfold.
