Creamy Tomato Soup and 2024 Market Predictions
What’s better on a cold winter’s day than a warm, delicious bowl of creamy tomato soup? I like mine served with a grilled cheese. Let’s make some soup, while I share 2024 Market Predictions.
Ingredients:
1 tablespoon olive oil
½ of a yellow onion
1 garlic clove, minced
2 (28-ounce) cans diced tomatoes
1 cup chicken stock or vegetable stock
1 teaspoon black pepper
2 tablespoons brown sugar
½ cup heavy cream
1 teaspoon salt (or to taste)
¼ cup chopped fresh basil (for garnish)
¼ cup grated Parmesan Cheese (for garnish)
Here’s How to Do It:
1. Heat a large stockpot over medium heat. When the pan is hot, add the olive oil, onions, and garlic. Sauté over heat until onions are translucent (about 10min ).
2. Add the diced tomatoes, black pepper, and stock to the pan. Bring to a boil, then reduce the heat to maintain a simmer. Simmer stirring occasionally until it thickens, about 25 min.
3. Strain the soup with a sieve, or carefully add the soup to a blender and blend until smooth. Return the soup to the pan, add the brown sugar and heavy cream, simmer for another 5 min and season with salt if needed.
